Freshly cooked beef chorizo crumbles in skillet

Spicy Beef Chorizo

  • Author: Chef Clara
  • Total Time: 30 minutes

Description

This homemade spicy beef chorizo is packed with bold flavors, making it a perfect addition to tacos, breakfast burritos, or even scrambled eggs. Unlike traditional pork chorizo, this version uses ground beef, offering a leaner yet equally delicious alternative. The rich combination of smoky paprika, earthy cumin, and zesty vinegar creates a savory, slightly tangy profile that’s irresistible. Perfect for meal prep, this chorizo can be cooked fresh or frozen for later use.

Ingredients

Scale
  • 1 lb (450g) ground beef (preferably 80/20 for best flavor)
  • 2 tbsp apple cider vinegar
  • 1 tbsp smoked paprika
  • 1 tbsp chili powder
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 ½ tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt
  • ½ tsp ground black pepper
  • ½ tsp crushed red pepper flakes (adjust for heat preference)
  • ¼ tsp ground cloves (optional for depth of flavor)
  • ¼ tsp ground cinnamon (optional for a hint of warmth)

Instructions

  • In a large mixing bowl, combine the ground beef with all the spices, salt, pepper, and apple cider vinegar.
  • Use your hands or a spatula to mix thoroughly until the spices are evenly distributed throughout the meat.
  • Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld. For best results, let it sit overnight.
  • When ready to cook, heat a large skillet over medium heat. Add the beef chorizo mixture.
  • Cook, breaking the meat apart with a spatula, until fully browned and cooked through, about 8-10 minutes.
  • Drain any excess fat if desired.
  • Serve hot as a filling for tacos, burritos, or over rice.

  • Cook Time: 20 minutes (plus optional marinating time)
