For the Chicken:

  • 2 large boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil

For the Sauce:

  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional, for spice)
  • ½ cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ cup fresh basil, chopped

For the Pasta:

  • 8 ounces penne or fettuccine pasta
  • 1 tablespoon salt (for boiling water)

Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
  • Sear the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  • Make the Sauce: In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant. Stir in the sun-dried tomatoes.
  • Add the Cream and Cheese: Pour in the heavy cream and chicken broth. Stir well, then add Parmesan cheese, oregano, paprika, salt, and black pepper. Let the sauce simmer for 3-4 minutes until slightly thickened.
  • Slice the Chicken: While the sauce simmers, slice the cooked chicken into thin strips.
  • Combine Everything: Add the cooked pasta and sliced chicken back into the skillet. Toss everything together to coat in the creamy sauce. Simmer for another 2 minutes.
  • Garnish and Serve: Remove from heat and stir in fresh basil. Serve immediately with extra Parmesan cheese on top.
