Scale
For the Chicken:
- 2 large boneless, skinless chicken breasts
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
For the Sauce:
- 3 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional, for spice)
- ½ cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ½ teaspoon salt (adjust to taste)
- ¼ teaspoon black pepper
- ¼ cup fresh basil, chopped
For the Pasta:
- 8 ounces penne or fettuccine pasta
- 1 tablespoon salt (for boiling water)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.
- Sear the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken and cook for about 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- Make the Sauce: In the same skillet, add minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant. Stir in the sun-dried tomatoes.
- Add the Cream and Cheese: Pour in the heavy cream and chicken broth. Stir well, then add Parmesan cheese, oregano, paprika, salt, and black pepper. Let the sauce simmer for 3-4 minutes until slightly thickened.
- Slice the Chicken: While the sauce simmers, slice the cooked chicken into thin strips.
- Combine Everything: Add the cooked pasta and sliced chicken back into the skillet. Toss everything together to coat in the creamy sauce. Simmer for another 2 minutes.
- Garnish and Serve: Remove from heat and stir in fresh basil. Serve immediately with extra Parmesan cheese on top.
