Vegetarian Lasagna

Ingredients

    • 1 zucchini, sliced

    • 1 red bell pepper, diced

    • 1 cup spinach, chopped

    • 1 jar (24 oz) tomato sauce

    • 1 package (9 oz) oven-ready lasagna noodles

    • 15 oz ricotta cheese

    • 1 egg

    • 2 cups shredded mozzarella cheese

    • ½ cup grated Parmesan cheese

    • 1 tsp basil

    • Salt and pepper to taste


Instructions

    1. Prepare the vegetables: Sauté zucchini, bell pepper, and spinach in a pan until tender.

    1. Mix the cheese filling: Combine ricotta, egg, basil, salt, and pepper.
        • Assemble the lasagna: Layer sauce, noodles, ricotta mixture, and sautéed vegetables.

        • Repeat and finish with mozzarella and Parmesan cheese.

    1. Bake: Cover with foil and bake at 375°F (190°C) for 50 minutes. Remove foil and bake for 10 more minutes.

    1. Serve: Let it cool for 10 minutes before slicing.
