Instructions

  1. Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Add the egg and vanilla extract, mixing until well combined.
  3. Gradually add the flour and salt, stirring until a soft dough forms. Cover and refrigerate for 30 minutes to firm up.
  4. Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Shape the Cookies: Roll the dough into 1-inch balls and place them on the baking sheet. Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
  6. Make the Pecan Filling: In a small saucepan over medium heat, combine brown sugar, heavy cream, vanilla extract, and cinnamon (if using). Stir until smooth and bubbly, about 2-3 minutes. Remove from heat and mix in the chopped pecans.
  7. Fill the Cookies: Spoon about ½ teaspoon of the pecan filling into each cookie indentation.
