Instructions
- Prepare the Dough: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- Gradually add the flour and salt, stirring until a soft dough forms. Cover and refrigerate for 30 minutes to firm up.
- Preheat the Oven: Set your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Shape the Cookies: Roll the dough into 1-inch balls and place them on the baking sheet. Use your thumb or the back of a spoon to create a small indentation in the center of each cookie.
- Make the Pecan Filling: In a small saucepan over medium heat, combine brown sugar, heavy cream, vanilla extract, and cinnamon (if using). Stir until smooth and bubbly, about 2-3 minutes. Remove from heat and mix in the chopped pecans.
