  • 1 tbsp neutral oil (such as avocado or coconut, optional for creaminess)
  • ¼ tsp sea salt (adjust to taste)
  • ½ tsp vanilla extract (optional, for extra flavor)

Instructions

  1. Toast the pistachios – Preheat a pan over medium heat and toast the pistachios for 3-5 minutes, stirring frequently until fragrant. Let them cool slightly. (This step enhances the flavor but can be skipped if using pre-roasted pistachios.)
  2. Blend the pistachios – Add the toasted pistachios to a high-speed blender or food processor. Blend for about 5-7 minutes, scraping down the sides as needed, until the nuts release their oils and form a thick paste.
  3. Add extras – If desired, add honey (or maple syrup), oil, salt, and vanilla extract for extra flavor and smoothness. Continue blending for another 2-3 minutes until the butter is creamy.
  4. Adjust consistency – If the butter is too thick, add a little more oil (1 tsp at a time) to reach your desired consistency.
