Fluffy Sourdough Pancakes

  • 1 cup active sourdough starter
  • 1 cup whole wheat or all-purpose flour
  • 1 cup milk (or plant-based alternative)
  • 1 egg (or flaxseed egg for vegan option)
  • 1 tbsp maple syrup or honey
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

Instructions

  • Mix sourdough starter, flour, and milk. Let rest for 30 minutes.
  • Whisk in egg, sweetener, baking soda, salt, and vanilla.
  • Heat a griddle or pan over medium heat, grease lightly.
  • Pour batter onto pan, cook until bubbles form, then flip.
  • Serve warm with maple syrup and fresh fruit.
